Italian cuisine has been envied and imitated all over the world for many years. With roots back as far as Ancient Rome, Italian cooking has been based on simplicity and developing tasty recipes that are passed down through generations.

Culinary Holidays have become a trend in the last ten years, where those who love and appreciate food and cooking have found a way of tying it into their annual holidays. It’s also a great way to meet new people who have the same passion and to really get to know a culture right from its core.

For these two reasons, CookinItalia offers an authentic Italian Cookery Course in a relaxed and intimate environment, where experienced and qualified Italian chefs take you through the real traditions of Italian cooking in practical and easy to follow hands-on lessons. Each class has been specially studied to give a traditional insight not only into how, but also the whys and that for that helped Italian cuisine evolve into the most popular in the world.

This course was launched at the beginning of 2016 and is the brainchild of Luca Federici, owner and chef at La Vignola Country Hotel. The Federici family began from humble origins, Luca’s parents owned (and still do) an espresso bar and pasticceria in Ceprano’s central piazza, which opened in the 1960s. Since then the entire family has been involved in the expansion to a restaurant (featured in SlowFood Italia’s Guide), a sports club and this year, the inauguration of their luxury Country Hotel. Luca’s wife Mara now manages the hotel complex, daughter of Cepranese parents who emigrated to Canada, where she spent her entire childhood and adolescence in Toronto. In effect, a family-owned business, run by a family born into the hospitality industry.
